Tortellini Soup Recipe
This soup recipe is a keeper. Very filling with lots of flavor. Just add a salad or side of carrots and celery and you’re golden.

5-6 servings
Ingredients:
lb ground beef
1/2 onion diced
2-3 cloves garlic minced
1 tsp Italian seasoning
32 oz chicken stock
14.5 oz diced tomatoes w/ garlic, oregano, basil
salt & pepper to taste
9-18 oz pkg tortellini
parmesan cheese
- In large pot brown ground beef, drain
- Add onion, garlic, seasoning cook til tender. 5 min
- Stir in broth, diced tomatoes, salt & pepper. Bring to boil.
- Reduce heat to medium, continue cooking uncovered, stir occasionally 15-20 min.
- Up heat to medium-high, stir in tortellini. Stir occasionally til tender.
- Serve immediately with parmesan cheese on top.
